Recipe : Lamingtons Cake

This is a free recipe : Lamingtons Cake, which I got from buying one of Lamington Baking tray :

Cake Mix Ingredients :
125g butter
2/3 cup sugar
2 eggs
2 cups self-raising flour
1/2 teaspoon salt
1/3 milk (approx)
1/2 teaspoon vanilla essence

Chocolate Icing Ingredients :
30g butter
1/2 cup boiling water (approx.)
3 cups icing sugar
1/3 cup cocoa
1/2 teaspoon vanilla essence
2 cups dessicated coconut

Cake Mix Method :
1. Cream butter and sugar until light and fluffy
2. Add eggs one at a time, beating well after each addition
3. Sift flour and salt
4. Add alternatively with milk to mixture
5. Add vanilla essence
6. Blend well, but do not over beat
7. Add a little more milk if necessary, to form a soft dropping consistency
8. Spread evenly onto tray
9. Bake in a moderate oven (180deg C/350 deg F) for 25-35 minutes, or until cooked
10. Turn out and cooled on a cake rack
11. Cut into 30 squares
12. Dip each square into chocolate icing and roll in coconut

Chocolate Icing Method :
1. Melt butter in 1/4 cup boiling water
2. Sift icing sugar with cocoa
3. Add liquid, mixing well
4. Add vanilla essence
5. The icing must be thin so that squares of cake can be readily coated
6. Add sufficient boiling water to form this consistency

Convection Oven

I have been hunting around for a Convection Oven recently. And finally got one.

Here I am going to share some info that I had gathered during this hunting period :

How do you choose a Convection Oven? First of all, you need to understand what are your cooking needs. Do you need the oven more for Baking, Roasting, Grilling or others? Different oven work best for different needs.

However following are what an oven should have, no matter what are your cooking needs :
  • Top heating coil
  • Bottom heating coil
  • Fan
  • Glass door wide enough to see the food inside the oven
  • Glass door that is able to maintain coolness while cooking for safety precaution - can be a double layer glass door
  • Rack(s)
  • Baking tray
  • Independent Lighting
  • Digital timer (better if have increments of 5 degrees)
  • Door that can be keep ajar at an angle (when testing the food inside)

Now I'll list out which oven function to use for different cooking purpose :

1. Traditional baking
- Top + Bottom Coil Heating (eg. cookies)

2. Pastry Baking
- Fan Heating (eg. rising bread, meringue, choux pastry, sponge cake)
- Top + Bottom Coil + Fan Heating (eg. satay, fish, meat, cookies)

3. Barbeque
- Top Coil Heating (eg. grilling)

4. Gratin
- Top Coil + Fan Heating (eg. grill, sear, brown, crisp chicken)

5. Pizza
- Bottom Coil + Fan Heating (eg. pizza, quiche)

60 Uses of Salt

Following are the 60 uses of Salt apart for seasoning :

1. If you drop a whole egg on the floor, pour salt all over the egg, let it sit for awhile, then use dustpan, the egg will come right up,
without all that mess.

2. Soak stained hankies in salt water before washing.

3. Sprinkle salt on your shelves to keep ants away.

4. Soak fish in salt water before decaling; the scales will come off easier.

5. Put a few grains of rice in your saltshaker for easier pouring.

6. Add salt to green salads to prevent wilting.

7. Test the freshness of eggs in a cup of salt water; fresh eggs sink;bad ones float.

8. Add a little salt to your boiling water when cooking eggs; a cracked egg will stay in its shell this way.

9. A tiny pinch of salt with egg whites makes them beat up fluffier.

10. Soak wrinkled apples in a mildly salted water solution to perk them up.

11. Rub salt on your pancake griddle and your flapjacks won't stick.

12. Soak toothbrushes in salt water before you first use them; they will last longer.

13. Use salt to clean your discolored coffee pot.

14. Mix salt with turpentine to whiten you bathtub and toilet bowl.

How to Pan Fry Salmon Steak with Peppers : 7 Easy Steps Recipe

Yesterday I pan fried a salmon steak and the result is the best up till now in my salmon cooking experience. The fish ended up crispy on the outside but tender and juicy in the inside. Even my hubby gave good review! (this is the first time he give good comment on my cooking so I am very very happy *dancing around in the room*) :D


I like this dish a lot as it is so delicious yet simply too easy to prepare. And I'll share how I did it here with you all.

1. First, smear some coarsely grounded black peppers onto both sides of salmon steak (flesh side and skin side).
2. Then rub some olive oil all over the salmon.
3. Heat up the frying pan (without adding any oil).
4. When the pan is hot enough, fry the salmon with skin side down.
5. Cover the pan till the salmon is turning pale about 1/3 thick.
6. Turn the salmon to the other face and repeat step 5.
7. Pan fry left and right side of salmon too in order to trap in the fresh salmon juice inside the salmon.

Voila! And here you are. A healthy, tantalizing delicious and easy to cook Pan Fry Salmon Steak with Peppers, a successful creation of CECiL ;D

What Baking Soda can do for you ?

As I was searching for info on baking soda, and I came across a website and never thought that I can use Baking Soda in so many ways, apart from cooking! Here I summarize part of the exhaustive list of the usages of baking soda from Chez D'Raven :

1. deodorize your refrigerator (*CECiL's thought : Wonder if I can use it to deodorize my armpits?* Eh, of course my armpits not smelly...just wondering only mah....)

2. help keep drains clean and smelling fresh

3. sprinkle baking soda on the fire to extinguish stove flames

4. put out fires from gasoline, burning clothes, rugs and upholstery

5. give your deck a weathered look

6. neutralize acid burns caused by battery acid, drain openers and toilet bowl cleaners

The Curious Case of Burnt Turner

As I was browsing through the internet, I saw this post from The Foodie's Food Trip. I was very excited by the post. Why? Because I just had the same experience few weeks ago!

Oh my poor plastic Turner!

My Plastic Turner got BURNT halfway during cooking! And mind you, I wasn't leaving the turner on the heating cooking pan or any kind of carelessness action. I was just stirring the meat as per normal in the pan. The difference is that I had just increased the stove flame volume.

Initially what I see was just some foreign black substances on the meat that I was cooking, and I thought I had burnt the meat. But upon stirring, I could feel that the texture of the UFO (Unidentified Foreign Object) was different from what a charred meat should be. And a few seconds later, this was what I saw ...

*Thinking*
Should I send you for cosmetic surgery?
*Thinking hard again*
I think better not. First you would need more maintenance. Second you might inflict injuries on yourself again.
Not that I am cold-hearted, just that I am a very poor chap.

So after some deliberating, I concluded that I should get another new turner instead of trying to salvage this damaged one. And so I get myself a new turner *drum roll please*

Ok. Ok. I know I am too poor to afford that turner. So I changed my mind to got myself a cheaper version.

Introducing my new Wooden Turner

I have been using this wooden turner for nearly a month and so far so good *touch wood* (pun intended).

Lesson learnt : DO NOT use plastic turner if you need to cook in high heat as the plastic might melt anytime.

PS : Initially when this 'saga' happened, I thought that I was a moron to spoil a turner in this manner. So now I am relieved that it is proven the fault is not mine since I could see another person having similar experience. Or is it that there is another moron on this earth? *wink*


PPS (13 Mar 09) : Received an email from one of my reader saying that there is this silicon turner that won't get burnt ... but I have not seen it before .... Does anyone had experiences with silicon turner? Please share! Thanx :)

Basic Chinese Cooking 101 : Tips #2 Fresh Ginger

So now comes the second tips on Basic Chinese Cooking 101 series. This time, I will talk about Ginger. Why Ginger? Because I also found ginger in my food nearly everyday ;)


So what are the things you will need to know about fresh ginger?


1. Choose fresh ginger that is hard and firm, smooth and avoid those with skin that has molds on the cracked surfaces.

2. Choose chunkier pieces if you are thinking of peeling the skin (so that it is easier to cut.

3. If you want your fresh ginger to last longer, keep it unpeeled in root form. It will last up to 3 weeks in the salad compartment of your fridge and up to 6 months in freezer.

4. When first cutting the ginger, cut off the knobs first.

5. Instead of peeling off the ginger skin with a knife as per normal, you may try scraping the skin off with a spoon or back of the knife.

6. It is better to mince ginger finely with a knife rather than using a food processor.

7. The taste that ginger imparts to a dish depends upon when it is added during the cooking process. Added at the beginning, it will lend a subtler flavor while added near the end, it will deliver a more pungent taste.

8. Ginger helps relieve indigestion, gas pains, diarrhea and stomach cramping; relieve pain and reduce inflammation associated with arthritis, rheumatism and muscle spasms;can curb motion sickness and morning sickness. Most importantly, it also has aphrodisiac powers!

Basic Chinese Cooking 101 : Tips #1 Garlic

In this first post on Basic Chinese Cooking 101 series, I will be talking about Garlic. Why Garlic? Because I found garlic in my food nearly everyday ;)




So here are things that you should know :

1. When looking for fresh garlic, choose those with solid and firm garlic heads.

2. If a garlic feels light or hollow and soft, it is not fresh. It's a no no if you can see sprout coming out of the head, because it is too old.

3. Keep your garlic in a cool and dry place, which is away from light and heat. Ample air circulation is also needed.

4. Sometimes your hands will still smell of garlic even after washing. To get rid of the smell, you can just rub your hands on any available metal around you.

5. You may get rid of garlic smell in your mouth by drinking green tea and lemon juice or eating yogurt. Chewing on parsley and fresh herbs also helps.

6. Remember to bring garlic with you if you suspect of any bloodsuckers around, such as vampire, mosquitoes and ticks. But sorry to say, it might not be affective against Ah Longs (illegal money lenders).

Basic Chinese Cooking 101 : a Beginner's Guide

I remembered the first time I cooked a Chinese style fried noodle about ten years ago. I was still studying at university at that time. Being a green-horn in Chinese cooking, I did some mistakes and ended up the food tasted unappetizing (ok, ok, I admit ...it was actually to the extent of inedible, happy?! ). And the irony was that the one that have to suffer the aftermath of it was not me. As the intended recipient was for my housemates, I can still vividly remember the "grateful" faces they made upon the consumption of the morsel.

So here I am going to talk about some basic Chinese cooking tips once in a while in this blog, hoping to be able to help those facing the same predicament that I was in last time. (Hey the room is suddenly so bright, I think I am emitting a bright halo now! *smack and wake up* .... Oh it's just someone who had just turned on the light)

Pseudo BBQ Chicken Wing : The Recipe

Here's the special recipe from my Mother-in-law. And I self-named it Pseudo-BBQ Chicken

The chicken is not BBQed but it does taste very much like BBQ Chicken ! Yummy Yummy ....


METHODS
(for 2 pax per servings)

1. Prepare marination sauce.
Ingredients : dark soy sauce (0.5 tablespoon), light soy sauce (2 tablespoon), ginger, garlic (quantity of both according to your preference)

"Don't judge a sauce by it's color, ok !"


2. Marinate the chicken wings (around 12 pieces) 2-3 hours in advance.


The Wings have been waiting ...

3. Heat up oil in the wok.

4. Put the chicken wings into the wok and "BBQ" them !

Abracadabra !!


5. The chicken wings are ready for serving.


Oh Yummy .....

And of course the chef is not me lar .....

Danshen Drink : The Recipe

Here's another recipe for healthy drink.

This drink is good for building up energy and health.


INGREDIENTS
Danshen - around 3 pieces (for 2 pax per serving)


Honey Date - around 5 pieces



METHODS

1. Put everything together for boiling (low heat) for about 1.5-2 hours.

2. Ready for consumption.

Lingzhi Soup : The Recipe

So how do we prepare Lingzhi for consumption?

Here's some advise from a neighbourhood Chinese Medicine shop owner.


INGREDIENTS
(servings for 2 persons)

Lingzhi - around 5 thinly sliced pieces


Danshen - 3 long piece cut to smaller pieces (can also be substituted by Pao Shen)


Guo Ji (Wolfberry Extract) - a handful


Hong Zhau (Red Date) - around 5 pieces or a handful


Meat/Chicken (Optional)


METHODS

1. Put everything together for boiling for about 1-1.5 hours.

2. Ready for consumption.

Ayam Buah Keluak

Ayam Buah Keluak ...

This is a Peranakan dish that I have been watching it popping up again and again in The Little Nyonya drama show.

So did some search and found the following at Kuali.com :


Ingredients
  • 1 kg chicken, cut into chunky pieces
  • 15 buah keluak
  • 4 stalks lemon grass, bruised lightly
  • 4 tbsp oil

    Mix, then strain, to extract asam juice:
  • 4 tbsp tamarind paste (asam jawa)
  • 1 litre water

    Spices (grind and combine):
  • 15 shallots
  • 2 cloves garlic
  • 2cm piece galangal
  • 3 candlenuts
  • 8 fresh red chillies, seeded
  • 4 dried chillies, soaked
  • 1 tbsp belacan stock granules

    Seasoning:
  • 1½ tbsp sugar
  • 1 tsp salt

    Method
    Soak buah keluak in water for two to three days. Scrub well with a brush and wash clean. Chip a small hole in each nutshell at the thicker end of the nut.

    Heat oil in a wok, fry ground spices and lemon grass until fragrant. Add in chicken and fry, stirring constantly.

    Add tamarind juice and buah keluak. Simmer until the liquid has been reduced and chicken is tender. Add seasoning to taste, then dish out to serve hot.
